Beef Tamale Pie with Cornbread Crust ~ Easy Weeknight Meals
50 Easy Weeknight Meals
Throughout the week and even the weekends I sometimes struggle with what to serve. I'm short on time (we all are!) and I often don't have on hand what I need to make something to satisfy the whole family. With that in mind, a group of bloggers and I got together to bring our readers 50 Easy Weeknight Meals.
I'm sharing this simple to make {one pan and one casserole dish) and satisfying Beef Tamale
Ingredients:
1 pound ground beef
1 small onion, chopped
2 tbs. dry taco seasoning
1 cup frozen organic corn, thawed
1 cup diced or canned fresh tomatoes
4 ounces of shredded cheese ~ you can use cheddar or taco mix cheese
2 boxes of cornbread (mix according to the directions on the box and set aside for later)
Preheat oven to 375°.
In a large skillet cook beef and onions until browned, stirring often.
Stir in taco seasoning mix, cook for 30 seconds, stirring.
Add thawed corn and tomatoes.
Transfer to a casserole dish.
Top with ¾ of the cheese saving some cheese for topping the cornbread crust.
Top with prepared cornbread and remaining cheese.
Bake for 30 minutes or until corn bread is baked through and is lightly browned around the edges.
Serve with sour cream topping if desired.
