Slow Cooker Creamy Reuben Dip
This slow cooker Reuben Dip is perfect for entertaining! It's easy to make, creamy, hot and delicious and it's easy to double the batch if desired.
One of my favorite entertaining hacks is my slow cooker. Using a slow cooker takes a bit of the stress out of any event and this recipe is a wonderful treat for guests that can be made ahead and served when desired.
Slow Cooker Creamy Reuben Party Dip
One of my husband's favorite foods is a Reuben Sandwich. This dip is a somewhat less decadent take on a classic.

Ingredients
- 1 pound sliced deli corned beef chopped
- 1 cup sauerkraut drained, rinsed and chopped {see tip below}
- ½ teaspoon pepper
- 2 - 8 ounces packages cream cheese softened and cubed
- 1 cup Thousand Island Dressing
- 3 cups shredded Swiss Cheese
- Crackers baguettes or pretzel rods for serving
Instructions
- Add corned beef
- sauerkraut
- cubed cream cheese
- Thousand Island dressing
- and Swiss cheese to slow cooker
- Stir together.
- Cover and cook on low for 2 to 3 hours. Serve with crackers, baguettes and/or pretzel rods.

I made this for election night and my family gobbled it up. We did have lots of leftovers and it tasted great reheated as well.
