Chocolate Toffee Cupcakes with Toffee Buttercream Frosting

I had no idea until I few weeks ago when I did my Homemade Mallow Cups post that you could substitute flavored creamers for milk in recipes.  This has opened a whole new flavolicious world for me.  I really love toffee and Heath bars so I wanted to make some cupcakes that packed a punch and I wanted to give a little toffee kick to the buttercream frosting as well.

It was so easy.  I used International Delight Heath Coffee Creamer in the place of milk in my standard frosting recipe. I used a boxed cake mix and instead of the water it called for, I once again used the creamer.  The combination was dynamite.  You can adjust the flavor by using half coffee creamer and half milk for a little bit of a milder taste.

Boxed Chocolate Cake Mix ~ follow directions per the box with the exception of the amount of water called for ~ substitute International Delight Heath coffee creamer for the water.


1 1/3 cups International Delight Heath Coffee Creamer

1/4 cup all purpose flour

1/2 teaspoon salt

1 1/3 cups granulated sugar

1 1/3 cups softened butter

2 teaspoons vanilla


  1. Make the cupcakes according to the directions on the box.
  2. Frosting
  3. Combine the coffee creamer, salt and flour in a saucepan whisking until smooth.
  4. Turn the heat on high enough to bring the mixture to a boil but not a hard boil and continue whisking the entire time.
  5. Boil/whisk for one minute after boiling begins.
  6. Remove from heat, place this mixture in a bowl and cover with some plastic wrap to prevent a skin from forming.
  7. Allow to cool.
  8. When the above mixture has thoroughly cooled you may begin the next step.
  9. Cream the sugar, softened butter and vanilla with a mixer until smooth and creamy.
  10. Add the flour/milk mixture approximately 1/4 cup at a time and whip until fluffy (approximately 7 minutes).
  11. Frost cupcakes and add chopped up Heath Bars as a garnish if desired.
