Crockpot Chicken and Dumplings

Fall is the time to start thinking about those hearty and delicious comfort foods that we and our families love.  Today, I'm sharing an easy-to-make Slow Cooker Chicken and Dumplings recipe and I'm joined by some of my blogger friends who are also sharing their recipes for an even Dozen Comfort Food Recipes.  My recipe follows and links to all of the other delicious recipes are below that.  

Cupcakes and Crinoline Comfort Food is easy with this slow cooker crockpot chicken and dumplings recipe. It's hearty and delicious and a family favorite.

When I was growing up and my Mom would ask what I would like for my birthday dinner I almost always picked her chicken and dumplings.  This recipe is not my Mother's (sadly, I don't have hers) but it's a pretty close second and a recipe that everyone in my family loves.   

Slow Cooker // Crockpot Chicken and Dumplings

Ingredients:

Chicken and Dumplings-2

4 carrots, peeled and cut into Β½ inch slices

Chicken and Dumplings-3

3 large Yukon gold potatoes, peeled and cut into chunks

4 large skinned and boned chicken breasts

Β½ tsp. salt

1 tsp. freshly ground pepper

Cooking spray

1 cup chicken broth or water (I chose the low-sodium option)

2 - 10 ΒΎ ounce cans of cream of chicken soup

Freshly ground pepper

1 small package of frozen peas

2 hard boiled eggs, peeled and chopped

2 cups all-purpose baking mix (Bisquick)

β…” cup half-and-half or milk

Spray a 6-qt. slow cooker with cooking spray.

Place carrots and potatoes into the bottom of the slow cooker.

Chicken and Dumplings-4Heat a skillet with 1 tbsp. oil.  Salt and pepper each side of the chicken breasts and brown in skillet approximately 2 minutes on each side in batches (2 at a time).

Place chicken on top of potatoes and carrots in crockpot.

Chicken and Dumplings-7Whisk together broth and chicken soup.

Chicken and Dumplings-8Pour over chicken.  Sprinkle with fresh ground pepper.  

Cover and cook on low for 7 hours.

Remove lid and gently break up chicken into bit-size pieces.

Chicken and Dumplings-10

Stir in peas and eggs.

Combine baking mix and half-and-half.  

Chicken and Dumplings-12

Drop by spoonfuls onto chicken mixture and cook on high for an additional 1 hour (until dumplings are cooked through).

Serve!
