How to Make a Hearts of Palm Salad with a Zesty Citrus Dijon Dressing

That describes me so much of the time but lately, I am trying more and more to be adventurous and that includes making new recipes with ingredients I’ve never tried before.

My family is thoroughly enjoying this new side of my cooking.  I mean, who wants the same dinners time after time? I know I don’t and that’s why I was so excited to try Reese Hearts of Palm.

Hearts of Palm are extremely versatile

You can use them in:

  • Salads
  • Casseroles
  • Stir fry
  • Soup
  • Pizza toppings and more

I found that while I was making this salad, I was eating the medallion cut Hearts of Palm right out of the bag.  I did some serious snacking without regret but I did have to share.  Two of my sons were in the kitchen with me and they were snacking on them as well.  Kitchen conversations and sharing are the best in my opinion.

If you’re not familiar with Hearts of Palm (I wasn’t!) they’re a crisp vegetable with a delicate flavor.  They’re harvested from the inner core (the heart) of the palm tree and are a delicacy albeit a very affordable one.  They’re a low cholesterol food that’s rich in potassium, contains vitamin C, is Non-GMO Project Verified (so important) and are vegan/vegetarian-friendly.  All that in one awesome little package.

Hearts of Palm Salad

A delicious hearts of palm salad with artichoke hearts, romaine lettuce and a tangy citrus Dijon dressing.

Ingredients:

1 can Reese sliced Hearts of Palm, drained

1 can Reese quartered Artichoke Hearts, drained

3 hearts romaine lettuce – rinsed, chopped, and drained

Dressing:

¼ cup orange marmalade

1 lemon, juiced

2 teaspoons Dijon mustard

½ cup extra-virgin olive oil

Salt and pepper to taste

Directions:

Whisk in the olive oil slowly.

Pour over dressing, serve, and enjoy!

Ingredients

Salad

  • 1 can Reese sliced Hearts of Palm drained
